These are great lunch-box fillers and emergency snacks when a sweet craving strikes.
Ingredients:
- 1 cup almonds
- 1 cup oats
- ½ cup coconut
- ½ cup hemp hearts
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- Pinch of salt
- 1 cup medjool dates, pitted + softened slightly
- 1 tbsp maple syrup
- 1 tbsp coconut oil, softened
- ½ cup extra hemp hearts for coating
Directions:
- Process the almonds, oats + coconut in a food processor.
- Add the hemp hearts, spices, salt and blitz again.
- Add the dates, maple and coconut oil and continue to blend until a soft dough forms that sticks together in the palm of your hand.
- Add a few splashes of water if needed.
- Remove from the processor and begin to roll into balls, coating in the hemp hearts!
- Once finished, store in an air-tight container in the fridge or freezer!
