Ingredients:
- 1 cup shredded carrots
- 1 cup pitted dates
- 1 cup walnuts (or any other preferred nuts)
- 1/2 cup unsweetened desiccated coconut + extra for rolling
- 1/2 cup hemp hearts
- 2 teaspoon coconut oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- Pinch of salt
Directions:
In a food processor, add the shredded carrots, dates, walnuts, shredded coconut, hemp hearts, cinnamon, ginger, nutmeg, and salt.
Process the ingredients until they are well combined and the mixture starts to come together.
If the mixture seems too dry, you can add a tablespoon of water or more dates to help bind it together. If it's too wet, add a little more shredded coconut or hemp hearts.
Once the mixture has reached a sticky consistency, stop processing.
Scoop out small portions of the mixture and roll them into bite-sized balls using your hands.
Place the rolled bliss balls on a baking sheet lined with parchment paper.
Optional: Roll the bliss balls in additional shredded coconut or hemp hearts for extra flavour and texture.
Refrigerate the bliss balls for at least 30 minutes to allow them to firm up. Once chilled, they are ready to be served. Enjoy!
