Ingredients
Batter
- 1 ½ cups of self-raising flour
- 1 cup of white sugar
- ½ Hemp Merchants protein powder
- ½ cup poppy seeds
- ½ cup Hemp Connect hemp hearts
- 2 lemons worth of lemon rind – finely grated
- 100g butter
- 2 large eggs
- 1 cup of milk
Glaze
- 2 Lemons, juiced
- 1/4 cup of white sugar
Instructions

Pre-heat oven to 200 degrees Celsius

Melt the butter and add all the wet ingredients in a bowl

In a separate bowl, mix dry ingredients

Slowly pour the wet bowl into the dry mixture while mixing gently (do not over mix)

Spoon the mixture into a well-greased muffin tray. Should make around 12-14.

Bake for 10-15 minutes

Prepare the glaze by combining the lemon and sugar

Brush over the muffins once they have finished baking
Serving Suggestion:

For extra flare, caramelise some lemons for the tops!!
