Ingredients:
For the Base:
- 1/2 cup almonds
- 1/2 cup coconut
- 1/2 cup hemp hearts
- 1 cup of medjool dates
- 1 teaspoon of coconut oil
- 1 teaspoon ginger powder
- pinch of salt
For the Ginger Crunch Topping:
- 1 cup tahini
- 1/2 cup of coconut oil, melted
- 1/3 cup of maple syrup
- 2 tablespoons rice malt syrup
- 1 tablespoon of ginger powder
Instructions:
1. To make the base, add the almonds, coconut, medjool dates, hemp hearts, and coconut oil into a food processor. Pulse until the mixture is crumbly but sticks together when pressed.
2. Press the mixture firmly into a lined square baking dish, making sure it's even and compact. Place in the fridge while you make the ginger crunch topping.
3. To make the ginger crunch topping, add the tahini, maple syrup, rice malt syrup and ginger to a bowl. Whisk well. Add the coconut oil and beat until it forms a caramel-like texture
4. Pour the ginger crunch topping onto the base and spread it out evenly.
5. Place the baking dish into the fridge and let it set for at least 2 hours.
Once the ginger crunch slice is set, remove it from the fridge and cut it into squares.
