Ingredients:
- 2 cups cooked chickpeas
- 1 cup cooked carrots (about 2-3 large carrots)
- 1/2 cup tahini
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 cup hemp hearts, plus more for garnish
- Fresh parsley, chopped, for garnish
Method:
- In a food processor, combine the chickpeas, cooked carrots, tahini, lemon juice, olive oil, minced garlic, ground cumin, paprika, salt, and hemp hearts. Blend until everything is well combined and smooth.
- Taste the hummus and adjust the seasoning to your liking. If you want a creamier texture, you can add a little bit of water, one tablespoon at a time, until you reach the desired consistency.
- Once the hummus is ready, transfer it to a serving bowl. Sprinkle some chopped fresh parsley and extra hemp seeds on top for garnish.
- Serve with pita chips, vegetable sticks, or crackers. This hummus can also be used as a spread on sandwiches or as a dip for falafel.
