Hemp Strudel with Vanilla Sauce

Hemp Strudel with Vanilla Sauce - Hemp Connect NZ

Ingredients

This is the perfect meal for an Autumn afternoon tea or a scrummy Winter dessert.  A little bit naughty but lots of nice and good to know it’s balanced with the nutrition of Hemp Connect hemp hearts.

Strudel:

  • Filo pastry – 6 sheets (2 per strudel)
  • 5 - 6 apples (depending on size)
  • 1 lemon (squeezed)
  • 1-2 Tbsp coconut sugar (depending apple tartness)
  • 2 Tbsp butter
  • 1 tsp cinnamon
  • ½ tsp ground cloves
  • 3 tbsp raisins (who likes them – not me)

Nutty breadcrumbs:

  • 1 cup breadcrumbs
  • 1 tbsp Hemp Connect hemp hearts
  • 1 tbsp grated hazelnuts
  • 2 tbsp butter

Topping:

  • 1 Tbsp roasted walnuts
  • 1 Tbsp Hemp Connect hemp hearts
  • Icing sugar (sprinkle)

Vanilla Sauce:

  • 1L hemp milk (can be substituted for another plant milk)
  • 1 tsp vanilla extract
  • 4 Tbsp corn starch
  • 60 g sugar
  • 1/4 tsp turmeric

Instructions

Preparation:

1.      Prepare nutty breadcrumbs: heat the butter in a pan, add breadcrumbs and grated hazelnuts and fry slowly over moderate heat until golden brown. Remove from heat and set aside

2.      Peel apples, cut into slices and quickly sprinkle with lemon juice and rum. Depending on the acidity of the apples – and your sweet tooth - add 1-2 tbs coconut sugar, powdered cloves and a generous pinch of cinnamon

3.      Pre-heat the oven to 180°C / 356°F 

4.      Unfold 2 sheets of filo pastry on a baking paper. Distribute the nutty breadcrumbs over around 3/4 of the dough. Scatter the apples and raisins over it. Coat the remaining surface of the dough with melted butter, fold in the edges at both sides and roll up the strudel. Seal the ends well and lift the strudel onto a baking tin using the baking paper

5.      Coat with melted butter

6.      Do the same with the next 2 filo pastry sheets

7.      Bake for 30 – 40mins or until golden brown

 

Vanilla Sauce

1. Mix the corn starch with 50ml of the plant milk

2. Mix the rest of the hemp milk with the vanilla extract and bring to the boil

3. Add sugar and corn starch to the boiling hemp milk. Whilst stirring, simmer for about 1-2 minutes

4. Finally, stir in the turmeric for the colour

 

Serving Suggestion:

Serve dusted with icing sugar & a sprinkle of Hemp Connect hemp hearts
