Pork Hemp-balls in Coconut Curry Sauce
Ingredients
Pork Hemp-balls
500g free-range pork mince
1 carrot, grated
1 ½ tbsp fennel seeds
Pinch of chilli flakes
¼ cup panko breadcrumbs
1/3 cup Hemp Connect hemp hearts
150ml coconut milk
1 onion, finely chopped
2 cloves garlic, sliced thinly
Curry Sauce
1 tbsp coriander seeds
1 ½ tsp turmeric
4 cardamom pods, cracked
1 pinch cinnamon
1 knob of ginger, thinly sliced
2 dried chillis, whole
1 cup chicken stock
1 cup coconut milk
Instructions
1. Heat 2 tablespoons of oil in a pan
2. When hot add finely chopped onion, fennel seeds and garlic and a pinch of salt and pepper
3. In a bowl, pad the mince out to edge of the bowl and add a pinch of salt and pepper
4. Mix well and pad out again
5. To the pan, add the chilli flakes to season the onions and cook for 2 minutes
6. In a separate bowl, use the breadcrumbs to make a well and add in the coconut milk
7. Combine breadcrumbs, Hemp Connect hemp hearts, grated carrot and coconut milk well and add to the mince bowl
8. Add onions, garlic and chilli from the pan to the mince bowl
9. Using your hands, combine the mixture
10. Roll each small handful of mince into ping pong ball sizes
11. Refresh the pan, add more olive oil and re-heat till hot
12. Place meatballs around the edge of the pan, leaving space in the middle to add your sauce ingredients
13. Add coriander seeds to the pan
14. With the back of your knife, crack the cardamom pods
15. Add the turmeric, cinnamon, dried chillis and ginger
16. Flip your meatballs!
17. Add stock, and bring to boil
18. Once boiling, add coconut milk, the tops of the meatballs should just be popping out
19. Mix gently to combine
20. Bring to the boil, simmer gently for 8-10min
Enjoy!
Serving Suggestion:
To bulk up the meal a bit, serve on a bed of mashed potatoes
