Moroccan Eggplant with Hemp

 

Ingredients

·        Eggplant

·        Hemp Connect hemp dukkah or Smoked Paprika

·        Fresh garden herbs

·        Squeeze of lemon juice

 
 

Instructions

1.  Preheat oven to 180degrees Celsius

2.  Cut incisions into the aubergine in 1cm intervals, taking care not to cut the aubergine all the way through

3.  Dowse with Hemp Connect hemp oil

4.  Bake in pre-heated oven until almost cooked (about 30mins)

5.  Season with Hemp Connect hemp dukkah (see recipe) or smoked paprika

6. Return eggplant to oven to finish cooking (approx. 5mins)

7. Serve with freshly cut mint leaves (or whatever fresh herbs you have in your garden) and a squeeze of lemon juice
