Kiwifruit, Lime & Hemp Loaf

 

Ingredients

Loaf

  • 2 1/3 cups all-purpose flour

  • 1/3 cup Hemp Connect hemp hearts

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • ½ cup Greek yoghurt

  • 1 cup white sugar

  • 4 eggs

  • 1 tsp lime zest

  • ½ tsp vanilla essence or extract

  • 250g red kiwi fruit, peeled and pureed

  • ½ cup vegetable oil

Lime syrup

  • 2 tbsp lime juice

  • 2 tbsp water

  • 4 tbsp white sugar

 

 

Instructions

Loaf

1.      Grease a loaf tin

2.      Preheat oven to 175degrees Celsius

3.      Combine sifted flour, Hemp Connect hemp hearts, baking powder and salt

4.      In a separate bowl, stir yoghurt, sugar, eggs, vanilla and lime thoroughly

5.      Gradually add dry ingredients to wet ingredients and combine until flour patches have just disappeared

6.      Gently fold in kiwi and oil, do not over mix

7.      Pour batter into loaf tin and bake for 50-60min or until cooked

8.      When cooked, set aside to cool in pan for 10min

9.      Transfer to a cooling rack (over a base tray)

 

Lime Syrup

1.      In a pot, combine lime juice, sugar and water over a medium heat

2.      Stir occasionally until combined, and mixture is clear

3.      Set aside to cool

4.      (For decoration, you can add kiwi slices for decoration at this step before adding the lime syrup)

5.      Slowly and evenly pour the lime syrup over the loaf, covering the whole cake

6.      Sprinkle with Hemp Connect hemp hearts

Allow the cake & syrup to cool completely then serve!

Enjoy!
