Hemp, Walnut & Pecan Pie
Ingredients
Pastry
I home make this, but you could easily purchase a pre-made short crust pastry to save time
1 ¾ cups plain flour
150g butter, in small cubes
Pinch of salt
1 egg, beaten
1 tbsp cold water
Pie Filling
1 cup brown sugar, packed
50g butter
2/3 cup maple syrup
3 eggs, beaten
1 tsp vanilla essence
1 cup chopped pecans
½ cup chopped walnuts
½ cup Hemp Connect hemp hearts
4 pecan halves (set aside for decoration)
Instructions
Base
1. Pre-heat oven to 200degrees Celsius
2. Grease a round pie dish
3. Sift flour into a bowl
4. Add salt and butter cubes and rub together with hour fingers
5. Combine well until mixture has a breadcrumb-like texture
6. In another bowl combine beaten egg and chilled water
7. Make a well in the middle of the flour and add egg mix
8. Using your hands, mix until well combined
9. Transfer dough to a floured surface and shape to a flattish circle
10. Wrap in glad wrap (or beeswax/waxed paper eco-friendly alternative), chill for 30min in the fridge
11. On a floured surface, roll out dough – wide enough to cover the base and sides of your dish
12. Lay the dough over the dish and press into the edges
13. Discard excess pastry from around the rim
14. Cover and chill in fridge for 15min
15. Cover base with baking paper weighted with baking beads and blind bake for 20min until pastry is golden
16. After 20min remove the weights and paper and set base aside
Filling
1. Reduce oven temperature to 175degrees Celsius
2. In a pot, place butter, maple syrup and brown sugar over a low-medium heat
3. Cook for 5 minutes, stir consistently until butter is fully dissolved
4. Remove from heat, set aside to cool
5. Once slightly cooled, add beaten eggs and vanilla and stir to combine
6. Stir in the chopped nuts and Hemp Connect hemp hearts
7. Add filling to base, spread evenly
8. Arrange decorative pecans on top
9. Bake for 30-35min, until top of filling becomes firm
10. Cool in baking dish
