Hemp Crusted Lamb, Pea Puree & Cherry Tomatoes

 

Ingredients

Makes 2 Serve

  • 500g Lamb backstraps

  • 1 punnet cherry tomatoes

  • 3-4 tbsp Hemp Connect dukkah (or see Hemp Connect dukkah recipe)

  • 300g frozen peas

  • 150g sour cream

 

 

Instructions

1.      Pre-heat oven to 180degrees Celsius

2.      In a roasting pan place the cherry tomatoes and season

3.      Roast for 30mins

4.      Coat lamb backstraps with Hemp Connect dukkah, leave to rest

5.      Put the frozen peas in a pot of salted water. Bring to the boil and drain

6.      Blend peas and sour cream with a whizz stick or in a food processor

7.      In a pan, heat oil and pan fry lamb backstraps for 4mins on each side

8.      Rest for 5mins under tin foil

9.      Place pea puree in the middle of the plate & gently place the lamb and cherry tomatoes on top
