Kumara & Hemp, Chocolate Chip Muffins

 

Ingredients

  • 1 1/2 cups plain flour

  • 1/2 cup Hemp Connect hemp flour

  • 1/4 cup oats

  • 1/4 cup Hemp Connect hemp hearts (plus a small handful to sprinkle on the tops)

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/2 tsp ground nutmeg

  • 3/4 tsp salt

  • 6 Tbsp unsalted butter

  • 1 tsp vanilla extract

  • 1 1/4 cup soft brown sugar

  • 300g kumara (can substitute pumpkin), boiled & pureed (consistency is up to you! - I prefer it a little lumpy still!)

  • 3/4 cup dark chocolate chips

 

 

Instructions

  1. Pre-heat oven to 180 degrees Celsius

  2. Grease muffin tin or cut baking paper into squares and line muffin tin

  3. Combine flour, Hemp Connect hemp flour, Hemp Connect hemp hearts, oats, baking powder, salt and spices

  4. In a separate bowl, combine softened butter, soft brown sugar and vanilla essence

  5. Whisk eggs separately then gradually add to the rest of the wet ingredients

  6. Add pureed pumpkin and combine well

  7. Gently fold in dry ingredients and dark chocolate chips

  8. Spoon batter into greased (or lined) muffin tins

  9. Sprinkle a few Hemp Connect hemp hearts and dark chocolate chips on top

  10. Bake for 20 minutes

  11. Set aside to stand for 5 minutes

  12. Remove from tin and place on a wire cooling rack to finish cooling off
