Hearty Hemp & Kumara Bread

 

Ingredients

  • 300g Golden Kumera, chopped into small pieces

  • 1 Tbsp active dried yeast

  • 1 tsp sugar

  • 1 cup warm-ish water

  • 1 cup bread flour (or high-grade flour) + a little more for kneading

  • 1/2 cup wholemeal flour

  • 1/2 cup Hemp Connect hemp flour

  • 1 1/2 tspn salt

  • 2 Tbsp rosemary, chopped finely

  • 2 Tbsp Hemp Connect hemp seed oil

 

 
 

Instructions

Kumera

  1. In a pot of boiling water, cook kumara until soft

  2. Drain water and mash well

  3. Salt to taste

In the meantime;

  1. Pre-heat the oven to 200 degrees celsius

  2. In a small glass or ceramic bowl, combine yeast, sugar and warm-ish water

  3. Set-aside for 10mins - the mix should froth up to double its size or more! (If it doesn’t you may have some problematic yeast)

  4. In a large mixing bowl, combine the bread flour, wholemeal flour, Hemp Connect hemp flour, salt and chopped rosemary

  5. Mix the kumara mash, Hemp Connect hemp seed oil and frothy yeast mixture until well combined

  6. If the dough is too wet- add a little more flour

  7. Knead for 10mins on a flour-dusted surface

  8. Add more flour as needed until the dough is elastic and smooth

  9. Oil a glass or ceramic bowl, nestle the dough inside and cover with a damp tea-towel

  10. Leave to rise in a warm place for 30mins. The dough should almost double in size

  11. Cut dough in half, shape each half into a loaf and place on a greased baking tray

  12. Score the top of the loaves, approx. 1cm deep

  13. Set-aside to rise for another 20mins (the longer the better)

Serving Suggestion: Dip your hemp & kumara bread into some delicious turmeric soup!
