Beetroot, Hemp Vegetarian Poke Bowl

 

Ingredients

Roasted Beets

Poke Bowl

  • 1 Tbsp grated ginger

  • 1 Spring onion, finely sliced

  • 1/3 red onion, finely diced

  • 1 Tbsp of sugar; coconut, cane or organic

  • 3 Tbsp soya sauce

  • ½ Tbsp sesame oil

  • ½ Tbsp Hemp Connect hemp oil

  • Juice of ½ lemon

  • 1 ½ Tbsp toasted Hemp Connect hemp hearts

  • 2 cups cooked brown rice

  • 1 cup of de-shelled edamame beans, cooked

  • ½ cucumber, julienned or sliced thinly with a mandolin or peeler

  • Coriander to taste, chopped

 

 

Instructions

Roasted Beets

1.      Pre-heat an oven to 200 degrees Celsius

2.      In a bowl, combine 1 Tbsp soya sauce, 1 Tbsp sesame oil, 1 Tbsp Hemp Connect hemp oil, 2 Tbsp Hemp Connect hemp hearts & the juice of ½ lemon

3.      Add beets to the bowl and toss to coat beets well

4.      Add beets and remaining sauce to roasting pan

5.      Roast for 35-40min until the beets are tender, turning twice during roasting

6.      Set aside

Poke Bowls

1.      Set rice, and edamame beans to cook

2.      In a pan, add ½ tsp of any oil to avoid any initial sticking, add the 1 ½ tbsp of Hemp Connect hemp hearts to the pan and toast, they will release some of their own oil, you can leave this in the pan when you remove them

3.      Meanwhile, in a large bowl combine the spring onions, ginger and onion

4.      Add the sugar, soy sauce, lemon juice, cilantro and oils to the bowl, mix well

5.      Toss in the beats

6.      For serving, add ¼ rice to the bottom of each serving bowl

7.      On top of the rice, assemble the toppings; edamame beans, cucumber, roasted beetroot, sprinkle the toasted Hemp Connect hemp hearts on top

Optional Extras:

Tofu: If I have time, I like to add tofu, which I prepare by lightly coating bite-sized pieces in cornstarch, and crisping up in a pan with hot oil

Pickled Red Onion or Carrot: I usually have a jar of home-pickled red-onion or carrot in the fridge, which I also love to add

Remember the toppings are totally as per your preference; tuna, mango, avocado etc. all make interesting additions
