Hemp and Three Vege

This is my little sisters go to roast veggie recipe & there’s so much I love about it; it’s simple, fresh, full of flavour and can stand alone as a dish. In a time when families have to be ever more flexible in their catering, (speaking as token family vegetarian), this is the perfect compromise.

 

Ingredients

Makes 3 Serve

  • ½ small pumpkin, peeled and cubed

  • 1 medium kumara, cubed

  • 1/2 medium red onion, quartered

  • 1/2 medium yellow onion, quartered

  • 4 small brown shallots, halved

  • 1 lemon, quartered

  • Salt and pepper

  • A handful of fresh thyme

  • A handful of fresh rosemary

  • 4 tbsp Hemp Connect hemp hearts

  • 2 tbsp Hemp Connect hemp oil or olive oil

 

 

Instructions

1.      Preheat oven to 200°C fan bake and line baking tray with re-usable baking paper or a baking sheet

2.      Mix vegetables together in a bowl with salt and pepper

3.      Spread vegetables and lemon evenly on your baking tray

4.      Drizzle Hemp Connect hemp oil or olive oil over the vegetables

5.      Sprinkle over Hemp Connect hemp hearts and fresh herbs

6.      Bake in oven for 45mins, or until vegetables are cooked through  

Serve while hot !  

Decorate with slices of red kiwifruit and sprinkles of Hemp Connect hemp hearts
