Coconut & Hemp, Rice Pudding with Spiced Pineapple

 

Nadia Lim is one of my Kiwi kitchen heroes & few things beat her Coconut Rice Pudding & Spiced pineapple. But I couldn’t help myself from involving hemp somehow. So this is my ‘Hemp-ified’ rice pudding based on Nadia Lim’s ‘AKA Kitchen Hero’s’ yummy recipe! Click on this link to check out the original and a great prep video.

 
 

Ingredients

Rice Pudding

  • 3 cups jasmine rice

  • 1 ½ cups of coconut milk

  • 2 ½ tspn of vanilla paste, extract, or essence

  • A pinch of salt

  • 2-3 tablespoons of sugar, honey or maple syrup

Hemp Milk (1 ½ cups)

Spiced Pineapple:

  • 1 Tbsp coconut oil

  • 1 x 425g can diced pineapple, drained or half a fresh pineapple cut into 2cm cubes

  • 1 tspn ground cinnamon

  • Whole spices: 2 star anise, 1 cinnamon stick, or 3-4 cardamom pods (optional)

  • 1 Tbsp brown sugar

 
 

 
 

Instructions

Hemp Milk

  1. Simply blend the all the ingredients together, no need to sweeten the milk since the pudding itself is quite sweet

Rice Pudding

  1. Stir all the ingredients together apart from the sugar/honey in a pot over medium heat stirring often for about 8 – 10 minutes until the rice is cooked and the consistency is thick and creamy

  2. Remove from heat

  3. Mix in the sweet stuff

Spiced Pineapple

  1. Heat the coconut oil in a large frying pan and medium heat

  2. Add pineapple and spices, cook for around 5 minutes

  3. Add brown sugar and coat the pineapple, cook for a further 2 minutes

To Serve

  1. Put the rice in a bowl and top with the spiced pineapple

  2. Add a sprinkle of Hemp Connect hemp hearts for good measure. (optional: add some orange slices)
